Just because Thanksgiving is over doesn’t mean the pumpkin recipes have to stop! We love incorporating pumpkins into our dishes to celebrate the beautiful autumn season. After Halloween, you might also end up with a few pumpkins that you can use to whip up a gourmet meal.

Here are 5 great recipes featuring our favourite gourd:

1. Curried Pumpkin Soup

It’s getting chilly outside – not that we’re complaining. We love this season and all that it has to offer, including soup. Fall is the perfect time to start making soups! One of our favourites just so happens to include pumpkin. It’s an easy recipe to follow and only takes about 20 minutes to make, meaning you can have yummy soup in no time.

2. Cinnamon Pumpkin Seed Butter Recipe

This is another super easy recipe, tastes delicious and is a good way to dispose of those pumpkin seeds! Check out the recipe here. All you need are pumpkin seeds, cinnamon, maple syrup and a good food processor. If you don’t have cinnamon or maple syrup,  then just process the seeds to get a great homemade nut butter.

3. Pumpkin Spiced Latte

Everywhere you go there seems to be pumpkin spiced something. Although we’re big fans of the Starbucks Pumpkin Spice Latte, we found this recipe that is even better and can be made in the comforts of your own kitchen. The key ingredient in this recipe is the pumpkin pie spice. We like to top ours with a few spoons of whipped cream, of course.

4. Classic Pumpkin Pie

We made this pie for Thanksgiving but there’s really no bad time for pumpkin pie. The best part of the pie is truly the crust, so make sure to find a good recipe for one.  Some may say that pairing a pumpkin spice latte with the pie is simply too much pumpkin, but we disagree. Enjoy and don’t forgot the dollop of whipped cream!

5. Pumpkin-Ricotta Stuffed Shells

We mostly tend to steer towards desserts when talking about pumpkins, but that’s not to say that there aren’t many other uses for it too. This recipe for pumpkin and ricotta stuffed shells is delicious – the savory collective taste of the herbs, cheese and pumpkin will have your guests asking for seconds.
